A gourmet getaway on the black diamond trails

Dive into the world of truffles, local specialities and legends on a night to remember at the Boris family farm, between Ségala and the Causses du Quercy. You’re in for an exciting evening with a walk, tasting, unspoilt scenery and a warm welcome.

Truffle Farm Magic

Let’s gain a little ground… Above Saint-Céré on the way to Saint-Laurent-les-Tours… A patchwork of woods, garrigues and meadows weave together to showcase the land’s treasures, for those who understand how to grow them with care. This is where three generations of the Boris family have been running a biodynamic farm to produce tasty and unspoilt produce in keeping with nature.

The Boris family want to share these values with their visitors. They welcome visitors to La Ferme Des Sentiers Du Diamant Noir in summer, between June 15th and September 15th. The name, meaning “the black truffle trails farm“, says it all.

Hosts with the most and a welcome buffet

The arrival in the courtyard is always a treat. Join Raymond and his son Patrick for an evening off the beaten track… Spend your night learning about the Périgord black truffle, recipes, local traditions, age-old expertise and how the stars inspire everyone in a magical world.

The exhibition marks the beginning of our adventure. Photos present the world of mushrooms (focusing on the Périgord black truffle, tuber melanosporum) from prehistory to the present day, farming life of old and the history of mankind in the Saint-Céré area.

Next up isa tasting: check tablecloth, toast soaked in truffle butter, little garden tomatoes, ratafia and artisan juices make for a hearty aperitif. Exactly what we need to continue the adventure.

On the Causse terraces

We join our guides on the protected old Causse terraces. This is where the secretive stones and soil hide the precious truffles. People used to use sows to find them but truffle farmers now depend on their trusty dogs. The Boris family are joined by the well-trained Beauceron beauty Iroise. She has a real gift for it.

The tour is peppered with stops for anecdotes from our hosts who – it’s now official – are talented storytellers who know the land like the back of their hands.

A wonderful surprise awaits as we venture up the path! Tables are laid around a 13th century stone hut gazing at the illuminated fortress in Saint-Laurent-des-Tours beneath the clear star-spangled sky. The menu is as impressive as the setting… and the farm’s produce including mushrooms, heirloom fruit, vegetables and gold medal-wining AOP Périgord walnut oil (La Sauvageonne du Haut-Quercy).

Foodie poetry

A rainbow of tomatoes, venison or wild boar pâté, meat grilled on vine shoots, Sarlat potatoes and a host of stuffed vegetables from the farm (vegetarian options available) all washed down by wine from this wonderland. The whole family tend to the cast iron pots to keep the magic of the evening alive.

With our bellies full of delicious fare, it’s time to make our way back to the start point… which means we have more time to indulge in stories and legends. Dessert is waiting for us back on the farm… A vine peach tart and a poem: a marriage made in heaven for stars in our eyes, a flavour explosion in our mouths and happiness in our hearts.
