The dairy was created by Francis Verdier in 1986, at the foot of one of the "Most Beautiful Villages in France". In 1996, its very own cheese, the Rocamadour, was awarded the well-known and respected AOP status. In 2000, the dairy changed its name and became "L'Etoile du Quercy". It only uses milk from local producers, in full respect of the Rocamadour cheese-making tradition.
